A Catholic Foodie: Mhmmm! Moreish Brownies

Who wants brownies? Sparkle Caddle & Joe’Ella Caddle are sisters who have teamed up to master the art of baking. They belong to the parishes of St Joseph RC Church & Our Lady of Mt Carmel, Carapichaima For them, baking is like a special gift from God.

It started off as just wanting something sweet after a meal, and then trying out numerous baking recipes, the sisters found themselves perfecting their art of baking after years of practice And what they call “trial and error”. Today they are the owners of Moreish which is a local company that offers handmade chocolates, (70 per cent dark, white, cookies and cream).

Their cheesecakes and brownies are an absolute hit!

Here’s their brownie recipe for you to try

Ingredients:
1/2 cup melted, unsalted butter (hot)
1 tbsp olive oil 1
1/8 cup granulated sugar
2 large eggs 2 tsp vanilla extract
1/2 cup all purpose flour
1/2 cup unsweetened cocoa powder
1/4 tsp salt
Method:
Preheat oven to 350F (175C).
Lightly grease an 8-inch baking pan, line with baking paper and set aside
Combine hot melted butter, oil and sugar in a medium-sized mixing bowl. (Whisk well for approximately 1 min).
Add eggs and vanilla.
Beat until mixture is lighter in colour (approx 1 min).
Sift in flour, cocoa powder, and salt.
Gently fold dry ingredients into wet ingredients until just combined (don’t over-mix because it will affect the texture of the brownies). Pour batter into prepared pan, smoothing out the top.
(OPTIONAL: top with chocolate chunks or chips) Bake for 20-25 minutes or until the middle of the brownies no longer jiggle. If testing with a toothpick, the toothpick should come out dirty. Allow brownies to cool before removing from pan and then slice.

OPTIONAL ADD-INS: crushed/ roughly chopped nuts, chocolate chips/chunks, dried fruit
